I had some pumpkin last night in my bid back to healthy eating. I chopped up some a pumpkin I grew in my garden this summer. Peeled and cubed and filled 3 large zip lock bags. So I took one of the bags and put some spices and olive oil in it and then placed them on a cookie sheet and roasted them. They were really great! I love roasted pumpkin. Though my bean/corn tortilla stack wasn't that great. I was trying something new, it was okay but not great and the boys didn't enjoy it at all. Oh well, I'll try again another day.
